Fried W0W® Egg Nest Noodle

Ingredients


  • 50ml of peanut oil

  • 2 cloves of garlic, peeled and sliced

  • 2 cloves of shallot, peeled and sliced

  • 2 cm of ginger, peeled and julienned

  • 1 cup of frozen mixed vegetables*

  • 200g of W0W® Noodle

  • 1.5 tbsp of soy sauce

  • 1.5 tbsp of sesame oil

  • 2 tsp of sugar

  • 1 pc egg


*Can be substituted with fresh cut carrots, capsicum, or corn seeds if preferred

Preparation


Step 1

Heat 50 ml of peanut oil in a wok until slightly smoky.


Step 2

Add 2 cloves of peeled and sliced garlic into hot oil and stir.


Step 3

Add 2 cloves of peeled and sliced shallot into hot oil and stir.


Step 4

Add and stir 2 cm of peeled and julienned ginger into the hot oil. Keep frying until fragrant.


Step 5

Add and stir the frozen mixed vegetables that have been defrosted.


Step 6

Rinse the 200g of W0W® Noodle under tap water for 20 seconds before straining. Afterwards, add in the W0W Noodle to the wok and stir with vegetables.


Step 7

Add and stir 1.5 tbsp of soy sauce.


Step 8

Add and stir 1.5 tbsp of sesame oil.


Step 9

Add and stir 2 tsp of sugar to caramelise.


Step 10

Spread the fried W0W® Noodle out in a circle with a hole in the centre.


Step 11

Crack open the shell and drop the whole egg in the centre of the fried W0W® Noodle for about 1 minute.


Step 12

Scoop the W0W® Egg Nest noodles without breaking the egg yolk. Garnish with freshly chopped coriander leaves
