Ingredients
200g of W0W® Noodle
450g of Chicken*
1 tbsp of oil
3 pcs shallots
1 pack (or 250g) of instant curry paste
2 pcs of lemongrass
500ml of water
230g of potatoes
100ml of coconut milk
*4 drumsticks and 4 thighs, or 4 leg quarters

Preparation
Step 1
Wash, rinse, air dry the 200g of W0W® Noodle. Pan fry to slightly heat it.
Step 2
Cut the 450g of chicken into pieces and leave the bones in the pot.
Step 3
Add 1 tsp of oil into the heated deep pot.
Step 4
Peel and slice thinly the 3 pcs of shallots. Sauté until aromatic or light brown.
Step 5
Add 250g of instant curry paste into pot and stir fry until aromatic.
Step 6
Use only the white parts of the lemongrass and pound them.
Step 7
Add the lemongrass to the pot with the chicken and stir for 1 minute.
Step 8
Add 500ml of water into the pot. Cover the pot and lower the heat to medium.
Step 9
Bring the curry chicken to a boil before lowering the heat.
Step 10
Peel the 230g of potatoes and add to the pot. Simmer for 20 minutes or until the chicken is tender.
Step 11
Add 100ml of coconut milk into the pot and bring it to a boil.
